  I think RISC186 series MCU from www.rdc.com.tw is a choice for Nut/OS.
Low cost, high performance, easy available C compilier (BC), and even 
with  2
10/100M MAC controllers on chip(*R2020C

controller and
UART with FIFO. http://www.rdc.com.tw/ProductInfo.asp


As for NAND FLASH,  it is more appropriate for file system because it has
smaller sector size than NOR type FLASH. Coming with ATMEL ethernet
develop kit, there is a simple linear flash file system, but it has not 
been opimized for
writing. YAFFS is a portable ffs with embedded support, but it has 
strict license.
