Well, here is one of options:
Knowing the range of your input voltage  from +V to -V you have to determine 
the zero level as ((+V)-(-V))/2. For example, if you have to measure signal 
from +2V to -2V you have to shift level to 2V. Then +2V will turn to +4 
and -2V - to 0V. After that you can make an analog summer on an OP amlifier 
and a +2V reference, which will  perform this shift. After reading ADC value 
you have to subtract 2V from the result.
