If you want the GUI approach, there is "ChatZilla", a plugin for Firefox.

Personally, I'm quite fond of irssi, a test based client which is 
available on Linux/Unix, Windows and MacOS.

There's also X-Chat, a GUI based app that should be available everywhere.

There's so many around, it's hard to single out... the above are ones 
I've used and would use again.
