You could snoop rx or tx between the Ethernut board and the modem by
attaching one of them to an additional comport ( rx pin 2 ). You could then
capture the data using a terminal program capable of loging binary data (eg
teraterm http://hp.vector.co.jp/authors/VA002416/teraterm.html) and then
import the file to ethereal.

The only problem is that there is no timing reference between the captured
rx and tx responses, but its an cheap and easy place to start.
