You might want to look at the Technologic Systems TS-7200 and the TS-7250 
boards. They are PC/104 form-factor boards with a 200 Mhz ARM processor. 
They do run linux. The 7200 has 32mb of RAM and the 7250 can be configured 
with either 32 or 64mb of RAM. 20 or so digital IO's, 2 USB 1.1 ports, 
ethernet. SPI bus, watchdog timer, two serial ports, etc etc.

The power requirements for these boards are a little bit more than the 
Ethernut boards, and they aren't as forgiving. The boards do not have an 
on-board regulator, so you have to provide a 5v @ 450 mA power supply.
