If it's worth enough to you, there are companies that will extract data
from a broken hard drive.  In the case of an application like this, it
can be worth it to avoid a lot of rework.

Sorry, no this is not possible. You can download it from the ethernut
board. And with some luck you can convert it back to a binary and
disassamble the binary. But you can't convert it back to C.
